Meal Plan and Grocery List - Week 7/30-08/05
I realize its been a long time since I posted. To say we have been busy has been an understatement. BUT we just completed my oldest daughter's Spring/Summer softball season, so I'm back!!
This week I'm utilizing my Instant pot. I am in love with my instant pot! My husband purchased me one for my birthday and I believe I use it now several times each week! So, probably from now on I will have at least one entree cooked in my instant pot. It's super hot outside, so if I can use something that won't heat up my kitchen I'm all for it. I do cook my brown rice in it now because its so easy! NO stirring? Yes please!
My husband is on a low carb diet. I eat only complex carbs, so expect to see a lot of low carb dishes. I can add in brown rice when needed. I also love some roasted sweet potatoes!

This looks and sounds delicious! I love roast, and since I get to use my instant pot, I love it even more! Instead of putting my roast/gravy over mashed potatoes or rice, I will steam some frozen cauliflower. The gravy is made out of cauliflower too, so I feel like this will pack a double punch if I can get my kids to eat it!
My family and I both hate celery, so this will probably be left out. :)
Meal 2 – Roasted Chicken with Pan Sauteed Green Beans

With the chicken, we keep it simple. I buy boneless, skinless chicken thighs. I first add the thighs to a baking dish and season them with salt, pepper, and garlic powder. Then, bake them at 425 for about 40 min. After this, I will pull them out of the baking dish and place them on a cookie sheet. I will then broil them until they are golden brown. I will check them in 5 min increments to see how they are cooking. You can also add Teriyaki sauce or BBQ sauce to add more flavor. My kids like them plain with no sauce.
You maybe asking yourself why are you baking them and also broiling them? Well, its because with baking you are actually cooking the chicken thighs. By Broiling them, I am then rendering the fat and you don't get the fatty pieces while eating them. This chicken is juicy! Its not chewy or rubbery.

I will use the breakfast casserole recipe, but will probably turn it into muffins. Also, I don't have fresh spinach so will probably saute up some Mushrooms, zucchini, and onions. I will use my instant pot and cook some brown rice. All I add to my brown rice is some garlic powder and beef bouillon!
