Weekend Meal Prep 4/29 and 4/30

A day late and a dollar short! I normally post these on Sunday, but didn't have time.  I again altered my plan from earlier in the week.  For Meal #3 instead of roasted chicken, I grilled it.  I also had some fresh veggies leftover from Meal #1 so I decided to grill those too.  Out grill finally kicked the bucket at the very end of the summer/fall last year, and we decided not to replace it until it was time to grill again this year. Well we got a grill this weekend and I was more than ready to use it!

Day 1 - Chicken Parmesan over Sauteed Vegetables.

For this, I had no recipe. I started by preheating my oven to 425 and chopping up my veggies. I used 1 lb of zucchini, 1 lb of squash, and a few onions.  You can add whatever you want to for this.



I then heated up 1 tablespoon of olive oil in the pan and sauteed these veggies until tender.  I also added some salt and pepper to taste.  Once done, I placed these in the bottom of a greased 9x13 inch baking dish.  I then took my chicken and browned it about 3 min on each side.  I placed this on top of the veggies.



I then took some of my favorite spaghetti sauce and poured it on top.  I covered this with foil and placed it in the oven for 25 minutes.  


After this I took the foil off and baked it for 20 more minutes.  You can also add cheese at this point if you want.  

This seriously made the most tender chicken I have had in a while!  My husband LOVED it.  My kids LOVED it!!  


Day 2 - Two Meals.  Turkey Cabbage Stir Fry and Grilled Chicken and Vegetables.

I started with the Turkey stir fry.  I took my ground turkey and browned it in the skillet.  Then I added a can of tomatoes and salt, pepper, garlic powder, onion powder, and cumin.  I add one 14 oz can of tomatoes per lb of ground turkey.  I also added 1 Tablespoon per lb meat of Apple Cider Vinegar. I let this simmer for 5-10 minutes.


I then added the cabbage.  I cheated a little and bought some pre-shredded cabbage from the store. 


I added this to the skillet.  I do one bag for every lb of ground turkey.


I let this saute for about 15 minutes.


Done.  

Next I prepped my meat and veggies for the grill.  I dress all my vegetables the same. I drizzle with olive oil, salt, pepper, and garlic. The Chicken we added salt, pepper, garlic powder, onion powder, and Italian seasonings. 


With the veggies we grilled those until they were done enough for us.  I say "for us" because we like them almost burned. :) 

We put the grill on high and seared the chicken on both sides. Then moved it up to the top rack to continue cooking on a lower temp.  


I love the grill for so many reasons. Not only is the food delicious but it doesn't mess up my kitchen!!! 

More than likely for next week the grill will be the star of the show! It is Alabama vs Auburn softball weekend so we are going to tailgate in the back yard!! Hope you all enjoy!
