Weekend Meal Prep - Easter Weekend

First, I hope everyone had a great Easter weekend! Ours has been beyond blessed. We spent all day Saturday at the ball fields then today, our oldest two got baptized. My heart is so full right now!

Since we were going to be busy, I split the meal prep into two days instead of all on one day. As it happens on most weekends, I ended up altering my original meal plan I had posted earlier.  I decided to not fix the rice with the taco salads.  I also added some roasted asparagus because my parents gave us some they had just picked out of their garden.  What is better than fresh?  Our grill is also out of commission so I made Sauteed Garlic Chicken.  That is one of the things I LOVE about cooking.  I can take each recipe and make it work for us.

If you notice, I use parchment paper when cooking anything in the oven.  This is to save me time. The parchment paper keeps foods from sticking to my pan. It also keeps my pan from getting very dirty which makes it a lot easier to clean up. I highly recommend getting you some! 




Day 1 - Sauteed Garlic Chicken with Green Beans and Sweet Potatoes

I started early in the morning by cutting up my chicken breasts into bite size pieces.  I then made the marinade/Spice mixture from the recipe and poured over the chicken.  After this, I placed it in the fridge and let it sit in there until I was ready to cook. 

Once ready to cook, I placed 2 Tablespoons of olive oil in my pan and heated it to medium high heat. I then cooked my chicken in batches(So I wouldn't crowd my skillet) until it was no longer pink in the center.  My kids affectionately call this "White chicken" and it is one of their favorites.  They treat it like chicken nuggets.



While the chicken was cooking I chopped up my sweet potatoes.  I like my sweet potatoes to be in small chunks.  I then coated them with olive oil and seasonings.


I placed these in a 450 degree oven for 1 hour.  I stirred them every 20 minutes.  You can cook them longer if you want them a little more crispy.  I like to do this, but was HUNGRY and wanted to eat right then.

By this time my chicken was completely done and out of the skillet.  I had bought 3 bags of steam in the bag green beans.  So I steamed them in the microwave.  I used the same skillet I cooked my chicken in and added a bit more oil.  I added in the garlic and allowed to cook for a minute or two. After this I poured in my green beans.  I sauteed for 5 minutes and allowed the oil and garlic to fully coat the green beans. After this, I added some soy sauce and cooked it about 7 more minutes.  And Voila! Asian Restaurant green beans. This is really one of my family's favorite side dishes!



After everything was done, I portioned it out and placed them in their bowls. SUCCESSFUL Day 1.



Day 2  we cooked 2 meals.  Turkey Taco Salad and Broiled Fish with Broccoli and Cauliflower and Asparagus.

First thing I did was brown my ground turkey. While this was cooking I went ahead and made up my taco seasoning.  I am browning 4 lbs of turkey, so I made sure I had enough seasoning for all 4 pounds.  Once browned, I added some water and taco seasoning and cooked it for 5 more minutes. Then I placed it to the side to cool.



Next I prepped my asparagus.  I just added olive oil, salt, garlic powder, and onion powder.  You can do whatever seasonings you want but these 3 are my go to spices.



I placed the asparagus in a 450 degree oven for 25 minutes.  You can cook it less if you don't like your veggies well done like we do. :)



After this I prepped my broccoli and cauliflower. I placed them in the baking dishes and sprinkled them with olive oil, salt, garlic powder, and onion powder also. Told you this was my go to.  In the recipe you can also add lemon juice.  I like to squirt fresh lemon juice on my veggies right before I eat them. 



I placed them in the 450 degree oven and baked them for 40 minutes. I stir the broccoli and cauliflower every 20 minutes to make sure they are evenly coated with olive oil.



After the veggies are cooked, I broil the fish.  I placed them in a baking dish and sprinkled with a little lemon juice and blackening seasoning.  I will broil them for about 10 -15 minutes checking to make sure to not burn it every 5 minutes.  My oven gets HOT and so I like to keep a close eye on it.



After all was complete, I portioned everything out.  I just put taco meat in the bowls to warm up. I will take another bowl with lettuce, tomatoes, etc to with the meat, but you don't want to warm that up in the microwave!




I did end up  making a breakfast casserole. It was DELICIOUS! I will get the recipe together and post on this later.
