Weekend Meal Prep 5/06

SO, I had taken some beautiful pictures of all my food, but somehow my camera ate them. I am an engineer and yet my camera and computer teamed up against me and I can't retrieve some pictures. I did happen to save a few though.

We only cooked one time this week. I had went to a local grocery store to get meat for the grill and noticed they had chicken and pork on sale. I went ahead and stocked up on this and didn't cook any of the fish.

I started out by getting the meat marinated.  My husband requested a homemade white sauce, so I went ahead. With the chicken, I will eat mine with the skin removed, so I didn't see it as a big deal. All my white sauce includes is a Little bit of Mayo, A lot of vinegar, salt, pepper, and garlic powder. You can add more  mayo or less vinegar depending on your tastes. Some people like their white sauce sweet, so add sugar if this is the case.

I mixed up my white sauce and added the pork tenderloin and chicken to it. I let it marinate until ready to grill. This was probably about 10 hours.

We were having a few friends over, so steak was on the menu too. This is pretty easy. My husband lives by Moore's sauce. So in order to not over salt the steaks, we added water to the Moore's marinade the steaks were in.

I also went ahead and chopped all my veggies.  I had zucchini, yellow squash, and mushrooms.  I put these back into the fridge until ready to grill.

My husband kindly sliced the sweet potatoes lengthwise. I then boiled these for 5 min and then placed in a pan in a single layer to allow to cool and dry out.




When the time came to grill, we started with the meat first because this was what would take FOREVER. He would turn the meat every 5-7 minutes to ensure it did not burn.



Once the meat was done I drizzled all the veggies with olive oil and sprinkled with Salt, pepper, and garlic powder.  For the sweet potatoes, I also did the same, but I did add a bit of cumin to them too.



I did have to cook some green beans and rice to supplement the grilling, but those are pretty easy heat cook.



Once done I portioned them out and put up.  You may think that it wasn't a lot of meat but it was enough for at least 25 servings :) We eat a lot of protein.  And really, if you are heating up the grill might as well fill it up!




Next week, my camera will behave and I will follow my meal plan more closely. It's just that if I walk into a store and something is on sale i will adjust to incorporate it into my meal plan. You cannot pass up meat that is $1 per lb.
