Meal Plan and Grocery List - Week 5/08 - 5/14

Keeping it simple yet again this week. And, we are still enjoying our grill. It will be mother's day, so I want to be able to relax a bit. I deserve it right?  We have a family get together on Sunday, so most of the grilling will be done on Saturday.  Hope everyone has a wonderful week!  Meal 1 – Grilled Lime Shrimp with Asparagus and Brown Rice Shrimp Asparagus Brown Rice Recipes needed: http://www.food.com/recipe/grilled-lime-shrimp-43737 We were given some fresh gulf shrimp, so this will be used on the grill this weekend! SO, I had taken some beautiful pictures of all my food, but somehow my camera ate them. I am an engineer and yet my camera and computer teamed up against me and I can't retrieve some pictures. I did happen to save a few though. We only cooked one time this week. I had went to a local grocery store to get meat for the grill and noticed they had chicken and pork on sale. I went ahead and stocked up on this and didn't cook any of the fish. I started out by getting the meat marinated.  My husband requested a homemade white sauce, so I went ahead. With the chicken, I will eat mine with the skin removed, so I didn't see it as a big deal. All my white sauce includes is a Little bit of Mayo, A lot of vinegar, salt, pepper, and garlic powder. You can add more  mayo or less vinegar depending on your tastes. Some people like their white sauce sweet, so add sugar if this is the case. Meal Plan and Grocery List - Week 5/01 - 5/07

We finally have a grill! And the Iron Bowl of softball is this weekend, SO Let's grill out!  I plan on doing at least 2 meals at once on the grill.  You have to fire up your grill no matter how much you plan on cooking, so why not fill it up! This saves time, AND the most important thing, No kitchen has been harmed while grilling. Meal 1 – Grilled Pork Chops with Grilled Veggies and Rice Pork Chops Zucchini, Squash, Mushrooms Brown Rice Recipes needed: http://www.paleocupboard.com/italian-dressing.html I will use this recipe as a base for my Pork Chop Marinade. Anything with Vinegar, lemon juice, and a bit of oil will do the trick. Yo u can also just used store-bought here. For the veggies, just sprinkle with salt, pepper, garlic powder, and onion powder.  Apply liberally. Weekend Meal Prep 4/29 and 4/30

A day late and a dollar short! I normally post these on Sunday, but didn't have time.  I again altered my plan from earlier in the week.  For Meal #3 instead of roasted chicken, I grilled it.  I also had some fresh veggies leftover from Meal #1 so I decided to grill those too.  Out grill finally kicked the bucket at the very end of the summer/fall last year, and we decided not to replace it until it was time to grill again this year. Well we got a grill this weekend and I was more than ready to use it! Day 1 - Chicken Parmesan over Sauteed Vegetables. For this, I had no recipe. I started by preheating my oven to 425 and chopping up my veggies. I used 1 lb of zucchini, 1 lb of squash, and a few onions.  You can add whatever you want to for this.
