Weekend Meal Prep 08/06
I had hoped we would have an easy weekend. But, other plans occurred. :) I was supposed to get a massage on Saturday morning. I had been looking forward to that massage for a while, but Friday night one child came to me crying because her ear hurt. SO I had to cancel my massage and take her to the doctor. Its good I did because one ear was just swimmers ear but the other was also infected. Since school started today, I am very glad that I went ahead and took her to the doctor because now she is feeling so much better!!
When I made the meal plan, I did not realize just how easy meal prep would be this week.
I started as always with putting my rice in the instant pot and letting it go. :) Seriously, if you are on the fence about an instant pot, DON'T BE! Go get one now!
I decided to make the Pizza Casserole first. I started with browning my ground turkey with spices. As this was browning I chopped up my veggies. These were the onions, peppers, and mushrooms. Once the turkey was browned, I removed the meat and set it aside.
I then, cooked my veggies. Once these were soft enough I added spaghetti sauce and most of the pepperoni. I then added this to the meat mixture.
I sprinkled the cheese on top and placed a few more pepperoni on top.
And baked until bubbly! This was really, really simple. I believe I may make this for our next potluck!
This would be served with a side salad. For the kids I am going to serve with some noodles. You could also do brown rice. This seriously tastes just like pizza without the crust.
I then moved onto the taco salad bowls. I browned my ground turkey. Then added the taco seasoning and water and let it simmer. And done.
To serve for the week I will make a salad with tomatoes and lettuce and add the meat on top. For a healthy salad dressing I will use salsa. For taco salad its perfect. If you want it a bit creamy, add sour cream to your salsa and mix.
It was our anniversary weekend, so we needed a nice meal to celebrate. And to us, what is better than steak! So I first prepped all my veggies. I had some extra bell peppers, zucchini, and asparagus. I cleaned and chopped all the veggies and topped with a bit of olive oil, salt, pepper, and garlic powder.
I tossed to coat evenly then placed them on the grill. I turned them every 3-5 minutes and cooked it to my desired doneness. Meaning, we like our veggies a bit burned on the grill, others may not. :)
After this I placed all the meat on the grill and again cooked to desired doneness.
And done!
